Green Juice

I love love love Green Juice !!! I have a blender at home and try to make at least a smoothie a day. I do want to buy a juicer though. I have been wanting to buy one for a long time, cause then I can make veggie juices. Hmmm <3

I try to replace a meal with a smoothie a day. Ill have one for breakfast, or lunch or supper. It refills me with energy and the same "good feeling" I get after working out. I just feel so good after drinking one, plus they taste yummy and It's a good boost for your health.

This one is made out of one apple, some honey, a handful spinach, some water and some orange juice.
- if i had a juicer I would have put an orange in too instead of the orange juice, but I find that my blender don't go well with oranges.

Scrambled Tofu

Scrambled tofu is a fast and yummy meal to make in the morning or for any other meal of the day.

What need :
- U need a pack of tofu ( I think you can use pretty much any sort of tofu.)
- Veggie broth

Directions :
1. Sort of crumble the tofu in the skillet like you would when you make scrambled egg.
2. Add some veggie broth to give the tofu flavor.
3. Add other veggies and spices. I added cut tomatoes, mushroom and some oregano spice.




I'd say this is pretty health and it taste even better then normal scrambled egg. I have never been a fan off egg other then in cake, but when I went vegan I found out you don't need egg to make cupcakes or pancakes which was a nice surprise.
If you do however like egg and you have gone vegan this is the dish for you!!! Even I love it

Silver Dollar Pancakes

I made this for breakfast this morning, but you can also eat it as a lunch or as a dessert.

All you do is use a thick recipe for pancakes and make small pancakes on the stove instead of big once.
Easy right :)



(Not the best picture) but I topped the Silver Dollar Pancakes with fresh cut strawberries, some maple syrup and some chocolate sauce.

French Toast

After living in America for two years I fell in love with French Toast <3 Since the original recipe has egg I can't use it so I came up with my own French Toast recipe. Hahah making French Toast is very easy.

It's so good ... as you can see I don't use too much syrup.. I know some people pile it on like it was their last meal.. how much you decide :)

What I use :

- 1 cup almond milk or soy milk
- 1/2 tsp cinnamon
- 1/2 tsp vanilla sugar
-  1 T Tofu ( u don't need this if you don't have it.. I think it's good without also)
-  2 slices of bread which I slice in half (so I have 4 slices )
- Maple syrup

Direction:

1. Mix the milk, tofu, cinnamon and vanilla sugar together with a fork or a blender to a fine mixture.
2. Dip the slices of bread in the mixture. Dip them so they are soaked but do not let them lay in the mixture.
3. Warm a skillet, add some oil and cook the bread till they are golden on both sides.
4. Serve right away with maple syrup on top ....hmmmm... yum...

Enjoy French toast for Breakfast or Lunch. I would probably not eat French Toast more then 1-2 a week. I'd save this yummy dish for the weekend or a day you need an extra treat.

What I have been eating Lately

I am still very busy with finals this last month. I love working with 3D and I am having such a good time being busy at school, but at the same time I don't have time for much else.
But back to the food. Here is some pictures of what I have been eating.
I hope it inspires you to be creative when it comes to food.




Dinner 1:
 I filled lettuce leafs with beans, tomato and corn in a tomato sauce. I ate it with french fries. I just had to have french fries this day. I was craving it so bad.




Dinner 2: Veggie soup
I heated water with veggie broth. Cut tofu in squares and combined in the water with sliced carrot and broccoli.  Yummy. It filled me up and gave me a warm and cosy feeling inside.


Dinner 3: Noodle soup
I used a pack of noodles, white beans, broccoli and veggie broth. I just love how easy it is to make !


Breakfast : Melted "Cheese" bread. I used a bread bun, cut it in half. I added ketchup and vegan cheese. I put the bread in the stove until the cheese melted and toped it with heated white beans and dry onion.
So easy to make and oh my so good. It was like eating a real fat filled toast.



Dessert : Coconut Ice Cream.
I used about 1 cup coconut milk, added some tablespoons of shredded coconut and some maple syrup. I filled a small bowl and put it in the freezer. I kept stirring the ice every hour to get a good texture since I don't have an ice cream maker.


Dessert 2: Banana Ice Cream
I put a banana in the freezer for a few hours. I mixed the banana in my mixer and topped it with some melted chocolate. Hmmm.

I got to say I love food, and I enjoy making food when I have the time and the space. My apartment is really small with no stove so cooking is not as much fun as at my mums house :p
One day ill get my own house :D

Blueberry Muffins

I made the same kind of muffins as the carrot muffins. I had to tuck the blueberries in though, cause the muffin dough is pretty thick and I did not want the blueberries to crack.


These are my new "Blueberry Breakfast Cake". I love Starbucks Blueberry Breakfast Cake and would treat myself with it once a week. Now when I'm Vegan I can't have them but I can have these :) They are just as good without the sugar. Hmmm.


Recipe (Just change the shredded carrots with blueberries and added 1/4 T of lemon juice pr muffin.) This is not my recipe. I found it on the blog where I linked you too. You should try out some of the other recipes too. I have tried many and keep coming back to this blog, cause the recipes are healthy and so goooood!!


This is how they look plain (without the cream on top). As you can see I multiplied the single lady recipe by 12. So now I have 12 muffins instead of 1. My mum wanted some extra muffins she could freeze.



Next time I might add some more lemon juice to the recipe. I love the lemon taste in the Blueberry Muffins. Enjoy your breakfast :)

My kind of Toast

Yummy. Toast for Breakfast. I repeat yummy. The bread gets oh so crispy…  This sandwich does not contain any animal products like most toasts. Which also mean it does not have all the fat. Hurray!
It does however have spinach and tomato. Your body is going to love you for picking this toast.


You need:
-       Two slice of bread (non dairy) – Mine is made from whole wheat and has hemp seeds and sesame seeds on top.

-       Some spinach and one other lettuce of your choice (I used 5-6 spinach leaves and 2 Little Gem leaves

-       Slices of tomato (I used 2)

-       Vegan cream cheese (I used Tofutti plain)

-       Some pepper to taste

      I fry mine on a pan, but you can also use a oven. I don't have one..

Directions:

1.    Take on slice of bread. Cover with cream cheese.
2.    Put the veggies on and some pepper
3.    End with the second slice of bread on top
4.    Press it together
5.    Fly 3-5 min on each side
6.    When done eat, or cut it across so you end up with two rectangular sandwiches.


I love this sandwich and cannot get enough of it! I ate three of them yesterday and felt like I could not move. I would recommend only eating one J

Pancakes

I love them. I can never get enough of pancakes, and I would gladly eat them for every meal. Im not though, cause that would not give my body all the vitamins it needs. I so wish they could though.

I love thin pancakes. Crepes with banana and melted chocolate oh my it just taste so good. Pancakes with bacon it`s so good, but also in my past. I need to find a fake bacon. Thats the one thing I don´t know if I can live without in the long run?
Thick pancakes with Blueberry jam and some vegan cream. It taste amazing!


I used to hate thick pancakes at first when I lived in America. I would miss the thin pancakes I was so used to at home. The pancakes I would eat every Sunday and that I grew up with.
After giving the American pancakes a few tries I started liking them too. It´s weird hahh..
When I came back to Norway I missed the American pancakes and when in America I missed the Norwegian ones.


Hahah But now I can have them both =)

Oatmeal O How I Love You!

I eat oatmeal almost every morning. Why? It taste good, it fills me up until Lunch, and it only takes about 3 minutes to make. Also on a cold morning, like most mornings in Norway it makes me warm, and ready for the day.


Here are just some examples of how I eat my oatmeal.

1. With  1T peanut butter and 1T cacao powder. Hmmmm. It`s almost like a treat.

2. With cinnamon and vanilla powder in it. I cook it with the cinnamon and vanilla in it.

3. With strawberry jam on top and some vanilla powder in when I make it.

4. With honey and cinnamon.

5. With crushed nuts and chocolate. yumyumyum. I am a chocolate monster

With Blueberry jam, honey and almonds on top. Cinnamon mixed in when cooking.


1 tsp vanilla mixed in and 1T cinnamon when cooking. Honey and cinnamon on top when done.

Oatmeal I love you for your versatility!!!

Fast Oatmeal

This is a fast recipe in the morning when you are headed out the door. In this recipe you combine peanut butter and cocoa powder with oats. Sounds yummy hmmmm…..


You need:
-       1 cup oat
-       1 T peanut butter
-       1 T raw cocoa powder
-       ½ cup milk (I use almond)

Directions:
1.     Combine oats, cocoa and peanut butter in a bowl. Microwave for around 1 minute.
2.     Take it out and mix with a fork. You can eat it now or you can add milk. If you add milk microwave for 2 more minutes and stir. If you want your oats drier microwave 1 more min.


You can also do this with oats, milk and strawberry jam (If you want more of a berry oat). Or you can use oat, milk, cinnamon and nuts.

There are many different combinations and only your brain to stop you.
I don’t like using the microwave so I like to use the stove. It takes longer but it is just as good.

Let me know if you know any good tasting combos, because I really love oats in the morning.

Fast Breakfast

So this is what I made for breakfast this morning. I was in a rush and needed something quick but still healthy and jammy. This breakfast is easy to make. Very easy. With the taste and smell of herbs. Also the taste of cinnamon is in the air and I feel very spiritual.





What you need:

1 slice of bread (I used a non dairy bread)
avocado
tomato
Tofutti Creamy Smooth, Garlic & Herbs
Honey
cinnamon
milk (soy or almond)
1 or 2 shots of coffee

Directions for Bread:
1. Slice the piece of bread in two.
2. Cover it with cream cheese
3. Put slices of avokado over the cream cheese.
4. Cut a thin slice og tomato and put on top.
5. You can also sprinkle some oregano or any hurb on top if u want. I like it best with just the taste of the cream cheese herbs , but that is up to you.

Cinnamon Coffee:
1. Heat up some water enough for one or two shots of coffee
2.  Fill a glass half full of milk and use a milkfoamer.
( I just got one and I love love love it! It makes me feel like im drinking coffee at a cafe. I get the sort of relax and luxary feeling. )
3. Mix in a table spoon of instant coffee to the water and a tea spoon of honey.
4. Pour some milk in a cup. mix the shot in with the milk. Then at the end scoop the foam on top and sprinkle with cinnamon.
