Snack time :)

It's snack time ! Hmmm. Sometimes you are a little bit hungry, but you know you are going to eat dinner or a bigger meal later. What do you eat? A fruit is a good choice. Maybe two fruits? Maybe some nuts, maybe a small bowl of cereal and a fruit. Hahah you get the point
I decided to eat some baby carrots and dip them in chickpeas hummus. Hmmm.
Vitamins, fiber and protein all at once :) Good snack
I also ate a Larabar. They take some getting used too. After a while they are more like a treat. But at first when you eat them and your used to chocolate or candy as a treat u might think this is pretty tasteless and nasty, but you get used to it. Before you know it its Namnam Yumyum

Happy Sunday !!

Kiwi and apple makes the Doctor and pimples go away

I bought a lot of apples and kiwi last week. I have been eating one of each everyday. hmmmm. Feels good to eat something healthy.

I found out that apple actually reduce and fights to prevent pimples. That is just so great.
It also has a lot of fiber which is good for your tummy and it fights bad breath. How good is that. It also has calcium and iron.

Kiwi have all the vitamins you need in a day. Thats a good reason to eat one everyday. Don't you think? I love kiwi cause its sour and sweet at the same time.

Have a good week :D

A Little Late night snack

Water with lemon and mint leafs and an apple with peanut butter and some nuts :)
I love the mix of apple and peanut butter. It's also a great mix ( apple has fiber and peanut butter has healthy fat) to eat after a workout.

I know I am drinking water from a bowl. I kinda like to drink tea and water from a bowl. It makes me feel spiritual.. hahahha funny I know, but try it :)

Spring Rolls

I made spring rolls for the first time. I have always loved spring rolls. I love to dip them in sweet and sour sauce, but this time I had to use soy sauce instead (my sweet and sour sauce was empty).

It did not take long to make them and I was very surprised at how easy it was.

What you need :
- Spring roll sheets
- Filling of your choice  ( I imagine you can use whatever you have in your fridge. Here I used lettuce and shredded carrots).

Directions:
1. Heat your filling on the stove.
2. Take one spring roll sheet and dip it in a bowl with warm water. The sheet will become very soft and sticky.
3. Transfer the sheet to a plate where you cover 1/5 - 1/4 of it with filling.
4. Wrap the sheet tightly together so that all the filling is tucked inside.
If you don't know how to fold look at this
5. Cook the spring roll on middle heat for around 10 minutes on each side.

I hope you enjoy making spring rolls and the weekend. I know I am going to make some more and go buy some sweet and sour sauce.

My kind of Toast

Yummy. Toast for Breakfast. I repeat yummy. The bread gets oh so crispy…  This sandwich does not contain any animal products like most toasts. Which also mean it does not have all the fat. Hurray!
It does however have spinach and tomato. Your body is going to love you for picking this toast.

You need:
-       Two slice of bread (non dairy) – Mine is made from whole wheat and has hemp seeds and sesame seeds on top.

-       Some spinach and one other lettuce of your choice (I used 5-6 spinach leaves and 2 Little Gem leaves

-       Slices of tomato (I used 2)

-       Vegan cream cheese (I used Tofutti plain)

-       Some pepper to taste

I fry mine on a pan, but you can also use a oven. I don't have one..

Directions:

1.    Take on slice of bread. Cover with cream cheese.
2.    Put the veggies on and some pepper
3.    End with the second slice of bread on top
4.    Press it together
5.    Fly 3-5 min on each side
6.    When done eat, or cut it across so you end up with two rectangular sandwiches.

I love this sandwich and cannot get enough of it! I ate three of them yesterday and felt like I could not move. I would recommend only eating one J

Easter Egg

Happy Easter J Instead of giving away Easter eggs this year I did something different. I filled old jars with home made confetti.

My favorite is the white one, which I’m going to make again this Christmas. They remind me a bit of bounty chocolate.  They are very easy to make and I think they look cute.

What you need:
-       Marzipan
-       Vegan chocolate
-       Shredded unsweetened Coconut
-       If you want to color the marzipan pink you can use the juice from beet vegetable
(If you use just a bit of it you cannot taste the beet!)

Directions for white snowball:
1.     Make balls out of the white marzipan.
2.     Use a toothpick and dip half of the marzipan ball in melted vegan chocolate.
3.     Sprinkle the shredded coconut on the chocolate half of the ball before the chocolate dries.

These are just dipped in chocolate.

These have an almond inside. They kinda look like red pepper

Decorate the jars different and have fun with decor
I hope you get inspired to making your own Easter candy.

Avo and Car Sushi

I love sushi. I learned to like sushi when moving to San Francisco, where I got a lot of Asian friends that all love sushi. First I thought it was weird tasting, but I learned to love it and now I truly love it!! Give things a few tries before you brush them off.

This is a veggie sushi roll. You only need 4 ingredients.  Sushi rolls are easy to make and fills you up. Seaweed is also very good for your body. It's full of minerals, vitamins and iron.

You need:
-       Two nori papers / sushi sheets
-       2 small carrots
-       1 avocado
-       Soy sauce
-       Sushi mat

Directions:

1.     Use a cheese grater on the carrots
2.     Put the Nori paper on a sushi mat. Scoop avocado on top, lay it by the edge of the paper but be sure to leave a border. Fill about half of the Nori paper with avocado.
3.     Put the cut carrots on top of where you laid the avocado.
4.     Roll the sushi mat from the edge where you started laying you avocado till the Nori paper reaches the end of the paper where there are no veggies. Use a bit of water on your fingers to make the edge of the Nori paper stick together.
5.     Now you have a roll of sushi. Then cut it into slices. Eat with some soy sauce dipping.

I hope you enjoy!

Chocolate Fudge!!!

Omg I love this !! It taste so good that my head almost got stuck in the mixing bowl. It taste a bit like brownies and look a bit like brownies, but in all fairness it taste better then brownies! I going to keep making these all the time and keep them in the freezer for when people come over or I really need some sweets. And yes it has no sugar, it is healthy and good for your skin :)
I found this recipe on youtube it's by natureknockout's. I made half a recipe. I have a really small fridge with a small freezer, so that's why.

What you need:
-       ½ cup cacao powder or cow powder
-       a little bit less the a ½ cup of honey or avagar (maybe half a cup if you use this)
-       ½ cup shredded coconut unsweetened
-       ½ cup coconut oil organic
-       Nuts
Direction:
1.     Mix everything (except nuts) in a blender.
2.     When the paste is smooth looking add crushed nuts. I put the nuts in a plastic bag and go at the nuts with a bottle. Feels great to get out some inner anger :p
3.     Put the mixture in a square box. I used a plastic one I have.
4.     Place in the freezer for 30 min.
5.     Cut into squares

6.     Then eat J or put the chocolate fudge squares in a plastic box and back in the freezer, so that I can eat them later

Chocolate Balls "Funny name ha"

This is easy to make and has a taste of Heaven.
Seriously if I could I would have someone feed them to me every minute. I think my ass would suffer but I would be happy as a balloon.

 Here is what you need:
-       About half a cup of almonds
-       8 big dates
-       1 tbs maple or any syrup
-       5 tbs raw cacao powder
-       4 tbs coconut butter
-       ½ tsp sea salt

Mix it all in a blender. Form into balls when the “dough” is sticky enough to hold together. Place in the fridge for 30min -1hour before you eat. Leave the balls plain or roll them in cacao powder or confectioner’s sugar or flaked coconut J Really what ever you want to roll them in. How about tutti frutti cake sprinkle?

They taste so muuuccchhh better when cold. Enjoy them with friends and I’m sure these are gonna be something you make again and again and again.

Chocolate

Today I made my own chocolate for the first time. I had no idea how it would turn out since I kinda put some ingredients together myself. I did not have all the products to the recipe I found online so it turned into an experiment.

But the finished product tasted so so good! I love chocolate and who know how much chocolate you get from not much.. Buying vegan chocolate tends to be very pricy

What you need:

chocolate molds
1 cup coconut butter
half a cup raw cacao powder
3/4 of a cup maple syrup or other sweeteners
1/2 nuts (i used almond)

Directions:
1. Put the nuts in a blender till they are fine cut
2. Heat coconut butter on low heat
3. Blend in cacao powder and the crushed nuts
4. Blend in sweeteners
5. When the chocolate/mass looks even transfer to molds
6. Put in the freezer and about 15 min later you have yourself some very tasty chocolate!

I would keep the chocolate in the freezer cause they get softer in the fridge.

chocolate marzipan confetti

I'm such a chocolate freak. I wish I could eat chocolate every day always without getting fat. I guess lots of people have the same wish. I made these marzipan chocolate hearts because I wanted chocolate and because they don't sell many vegan chocolates with filling in Norway. At least not that I know about.

Its pretty simple.
All you need is :

Vegan chocolate
Marzipan dough.
Silicon tray or ice cube trays
Milk ( Soy, Almond.. whatever floats your boat )

Directions:
1. Melt the chocolate then add 2-3 table spoons milk
2. Make balls out of some marzipan. Make the balls a bit smaller then the shapes in your tray.
Mine a bit smaller than the heart shape.

3. Add some chocolate in the tray. Put the marzipan ball in and lay more chocolate on top.
4. Put in freezer for a while about 30 min.

You can be creative with this. Try using peanut butter instead of marzipan in some of the chocolates.
Maybe you can put a tea spoon of jello in or maybe black liquorice or honey or coconut.

Here is a finished one. I took it out a pit to early cause I could not wait.. Maybe you can keep your hands of a bit longer?

I had some leftover so I just combined some marzipan with chocolate and put an almond on top
